Avocado Compound Butter

The other day when I was down at my neighbor's house she mentioned this avocado butter. When she told me what was in it I realized I had all the ingredients to make it! I'm glad I did; avocado butter is delicious. Cumin, cilantro, and lemon make for a bright fresh flavor. We had it on top of fish but you could use it on chicken, steak, burgers, you name it. It is simple to make; all the ingredients go into the food processor and are whipped up.

I used a cookie scoop and put the scoops on a sheet pan lined with parchment paper. You can put some in the frig to use right away or put them in the freezer to use later. Right out of the food processor the avocado butter had the consistency of guacamole. When you put it in the refrigerator it firms up.  What I was most impressed with is the color. Usually avocado turns brown quickly once it's opened up but the addition of lemon keeps the avocado a nice bright green. Avocado butter will make the perfect topper for many summer supers to come.

We've been having lots of fun with pizza on the grill. I decided to put some avocado butter and pepper jack cheese on one....Delish! Finish with a touch of crushed red pepper and you have an excellent appetizer.

My mother in law, Sue, told me about this Lavash bread from Trader Joe's. It works beautifully on the grill as well; crisp's up nicely.

Avocado Compound Butter

2 medium size ripe avocados
1 T. fresh squeezed lemon juice
4 T. butter, softened
2 garlic cloves
2 T. fresh chopped cilantro leaves
1 1/2 tsp. cumin
Salt & Pepper
Peel and pit the avocados. Place all ingredients into the bowl of a food processor and process until well combined. Use a cookie scoop to scoop avocado butter onto parchment lined baking sheet. Cover lightly with plastic wrap and put in frig. or freezer. Serve with grilled meat of your choice!
